Frequently Asked Questions

Bread Info

Yep, my breads are naturally leavened (aka sourdough) with no commercial yeast. The only exception are some specialty breads and pastries that are offered from time to time (rest assured that I’ll always note it in in the ingredients list).

Yes! I strive to use only organic ingredients in my entire operation. Ingredients are always listed in the item’s description, too.

All good breads must stale. A naturally leavened bread keeps anywhere from 4-6 days before turning rock solid. At that point, you can grate it for homemade bread crumbs, or make them into croutons or bread pudding or strata… get creative!

The bread keeps best in the paper bag provided and left on the counter. You can also transfer the loaf to a more airtight container (such a plastic bag) for longer keeping (and softer crust) – just be careful about condensation and look out for mold!

Galettes keep for 3-5 days in the fridge.

Order Info

Right now I’m selling bread and galettes directly through this site. In the future, I’ll add a list of where to find Gusto goods at other Long Beach shops and I’ll announce it on Gusto’s Instagram. Please do sign up for our mailing list (scroll to bottom of this page) to get updates of special events, pop ups and other local gluten-full news.

You can place an order for pick up (please see terms) or local delivery here on our website. Local delivery is an extra $3/order.

Order placed for pick up shall be ready on Thursdays between 3-5pm. We deliver to provided address between 5-6:30pm. Please note any special requests or notices for delivery such as on door, back gate, gate code, etc.

Any orders not picked up within the day and time window noted will be donated to someone in need in the community. A 24hr notice is required for orders that cannot be picked up on bake day.

We require a 24hr notice for orders that can’t be picked up as planned on the bake day. If your order isn’t picked up during the allotted time frame, it’ll be donated to someone in the community in need. Please select the delivery option upon ordering if you’re unsure about your ability to pick up.

I’m happy to deliver to any address within the limits of the City of Long Beach, CA. If you’re in a neighboring city, I would encourage you to place an order for pick-up or send a message to see if I can ship an order to you.

We make each item to order. For this reason all sales are final and we cannot offer refunds for items cancelled less than 24 hours before bake day.

Other Info

With at least a 1 week notice, we can cater to larger quantities. For restaurants and frequent large orders, please see our wholesale page.

Yes, most products are offered wholesale (plus other breads + pastries not on the current retail menu). Please contact us to learn more.
