Our Menu

We offer a variety of bread, pan dulce, pastry and cookie options every Wednesday through Sunday. We keep things simple, real, and delicious by making food with whole ingredients, stone-milled flours, + local produce.

Our loaves of bread are wild fermented (sourdough = masa madre) which involves a long fermentation process. When we say ‘sourdough’ we are referring to the fermentation process rather than the flavor of the bread.

Our pastries range from traditional to one-of-a-kind signature items and from a variety of cultures. Some guest favorites include: concha de cacao, nixtamal queen, doña, pastelito de guava, medialuna, bolillo de jalapeño + queso, chori-bun and pan de maíz.

Our specialty beverages + aguas frescas are made in house and from scratch with whole ingredients. All of our coffee is grown in Latin America and roasted by us via our sister business: Café Cuate.

We take pride in baking everything fresh each morning! Most of our baked goods are ready right at opening time, 7am. However, some favorites like conchas, huesos, choribun, pan de maíz and bolillos need a little extra time and will be available at 8am onwards.
We appreciate your patience and can’t wait for you to enjoy our freshly made treats!

Pro- Tip: Come between 8am-10am for the most selection! Generally, the later you arrive, the fewer choices there’ll be.

Our freshly baked pastries are meant to be eaten the same day or next day.
We make food like you would at home with NO preservatives, which means it has NO shelf life.

If you arrive close to our closing time, it’s common for there to be fewer items available so please prepare your expectations accordingly.

To make sure you get exactly what you want, plan to come in early or place a same-day order online for pickup. But if you do happen to arrive later, don’t worry—there’s always something tasty if you’re open to other options!

Pro- Tip: How to store your bread

Place your fresh loaf cut-side down on a wooden board or in a paper bag at room temperature for up to 3-4 days.

Avoid plastic—it traps moisture and ruins the crust. For longer storage, slice and freeze in an airtight bag; just toast or warm slices as needed.

Stale sourdough is perfect for croutons, French toast, bread pudding, or panzanella salad. You can also blitz it into breadcrumbs or revive it by sprinkling with water and warming in the oven at 350°F for 5–10 min.

Allergies + Dietary Concerns

Let your breadtender know about any allergies or intolerances you have, and we’ll be happy to guide you through our options.

If you have a serious gluten or nut allergy: While we take great care in our baking practices, we work with ingredients like wheat and nuts in our bakery daily. Because of this, we unfortunately can’t guarantee that any of our items are completely free from cross-contact.
We truly understand how serious food allergies can be, and we would never want to put anyone at risk. We’re honored you considered us, and we hope you find a place that can meet your needs safely.

Gluten-Free

Currently, we do not offer gluten-free bread or pastries, as everything is made in a flour-rich environment thus we cannot provide an item completely free of cross-contact. For anyone with serious allergies or diseases such as celiac we suggest avoiding our foods entirely.

We are old school and specialize in long fermented bread and pastries made with heirloom grains and we make everything with whole, high quality ingredients.

We believe in the wonders of wheat and wild fermenting it. We have a big appreciation for the naturally occurring miracle protein that is gluten making our loaves bubbly and delicious. We encourage folks to explore the beauty of wheat and consider the possibility of eating it under these circumstances.

Vegan

BREAD: Our breads are made with just flour, water, and salt, plus seeds depending on the one you select. Let your breadtender know for additional support through our options.

PASTRIES: Currently, none of our pastries are vegan – they all contain some form of dairy or eggs.

Oils

Currently, we use organic olive oil and organic sunflower oil in a small selection of products (for example: sesame flatbread, bolillo, crostini, mole empanada).

Salt Content

Our bread contains about 8-10 grams salt per loaf, 3-4 grams per hueso and flatbreads. Pan dulce, pastries and cookies contain approximately 1-3 grams of salt each.

Ordering & Availability

In Store Shopping

We open at 7am with our full daily menu of baked goods every day, Wednesday through Sunday. 

We help guests on a first-come, first served basis. Our shop is small and so we can only serve two parties indoors at a time. Any additional guests form a line outside and can browse our menu (with photos + descriptions) while waiting.

Once our breadtender is available, they’ll waive you in so you can browse the display case and make your selections. We are happy to answer your questions and accurately prepare your order.
With the exception of certain holiday specials, there are no limits to ordering.

Online Ordering

Same-day online ordering is available Wednesday through Sunday starting at 8am for pick up and local delivery. Click here to order online!

We also have plenty of items available for walk-in customers during business hours — but early birds get the pan, so if you expect you can’t arrive until later in the day, secure your favorites ahead of time by ordering online.
